Make the sauce: Brown up the sausage and remove from the pan. In the same pan, cook the onions until lightly brown. Mix eggs, milk, mustard, and onion and pour over layers. Breakfast Lasagna is a wonderful blend of flavors!

Instructions to make Breakfast lasagna:
  1. Cook bacon until crispy
  2. Pan fry left over potatoes in bacon grease
  3. Chop up mushrooms, red onion & cherry tomatoes and saute slightly
  4. Layer potatoes, cheese x2, spinach x2, veggie mixture, bacon then pour eggs on top with more cheese
  5. Cook at 400' for 40 mins or until eggs are fluffy & set

No one will ever leave the table hungry! Make it the night before (just don't bake it) and refrigerate! All you have to do is bake it in the morning! The leftovers are incredible reheated in the microwave! Sprinkle half of the shredded cheese over the potato layer.
