The ingredients needed to make Popping Polenta Pie:
- Make ready 2 Tbsp extra virgin Olive Oil
- Take 1 small onion finely chopped
- Take 2 cloves garlic finely chopped
- Get 315 g Extra Lean Minced Beef
- Prepare 2 red chillies chopped (de-seed to reduce heat)
- Prepare 1 tsp chilli powder
- Make ready 1 tsp cumin powder
- Make ready 1 tsp coriander powder
- Get 3 large ripe tomatoes grated
- Make ready 1/4 Cup red wine (optional)
- Make ready 1 tsp Italian herbs
- Make ready 1 carrot sliced
- Get 1/2 cup peas
- Take 1/4 cup Worcestershire Sauce
- Make ready 1/4 cup basil chopped
- Take Grated cheese of preference to top pie (I used a mature cheddar)
- Get 1 chopped jalapeno
- Take to taste Salt and freshly ground black pepper
- Prepare for the polenta
- Make ready 1 cup Polenta
- Take 3 cups boiling water
- Make ready 1 cup coconut cream
- Prepare to taste Salt
- Prepare 1/4 cup parmesan
Steps to make Popping Polenta Pie:
- Heat oil over a medium head and sautè until translucent then add garlic and sautè for about half a minute more.
- Add mince to onion and garlic and brown. Mix well.
- Once browned stir in chopped red chilli
- Mix in red chilli powder, cumin powder and coriander powder
- Then add in the grated tomato and mix well
- Followed by the red wine
- Add in the Italian herbs. Combine and let simmer until the alcohol cooks out (about 10 mins)
- Once the alcohol cooks out add in the carrots, peas and Worcestershire sauce.
- Cook until the veggies are tender and the sauce reduces.
- MEANWHILE PREPARE THE POLENTA by combining the polenta, water, coconut milk and salt on a medium heat until cooked through. Once cooked mix in the parmesan.
- Once veggies are tender mix in the chopped basil and pour into an oven proof dish
- Top with cooked polenta spreading it evenly over the mince mixture
- Finish by topping with grated cheese, chopped jalapeno and some chopped basil
- Bake until cheese melts and becomes a golden brown.
- Serve with a light crispy green salad and enjoy
