- Preheat the oven, Mash the tofu with hand, grate carrots, onions and chop green pepper, in a bowl add seasonings to the tofu mix well, in a separate bowl break eggs add scotch bonnet, onions, salt, spices, carrots, garlic, chopped parsley & mint leaves and whisk well, then add the egg mixture to the tofu and mix well.
